Hot Buttered Rum and ‘Everything’ Biscuits Arrive Tonight in River West

The Swill Inn’s burger

The Swill Inn replaces Paramount Room tonight, read the menu

Tonight’s the first night where customers can officially get their swill on. The former Paramount Room in River North has been transformed into a new gastropub with boozy cocktails and coffee drinks from an acclaimed bartender. The Swill Inn swings its doors open tonight at 415 N. Milwaukee Avenue under the co-ownership of barman Dustin Drankiewicz (Dusek’s, MONEYGUN, Deadbolt) with comfort food from Lamar Moore (Smoke Daddy, Currency Exchange Cafe).

Drankiewicz and partner Roy Appukuttan have designs on opening on more spots. But the Swill is their first. The drink list includes five signature drinks including a White Russian made with Swill Inn’s signature banana cold brew coffee. Coffee will get more play when the basement lounge, the Chit Chat Lounge, opens.

As far the menu, there’s classic chicken wings, a walking taco, and an “everything” biscuit (not bagel) served with smoked salmon. Moore promised daily specials, such as a fish fry. But for now, scope out his burger with double-stacked griddle beef patties and pimento.

Check out the menu and photos of the food below. The Swill Inn opens tonight.

The Swill Inn, 415 N. Milwaukee Avenue, open 7 p.m. to 2 a.m. on Tuesday through Thursday; 5 p.m. to 2 a.m. on Friday and Saturday.
